Quick + Delicious Tofu Breakfast Tacos

Spencer and I are usually in a hurry to get out of the house as quickly as possible in the mornings which usually means that we skip breakfast and spend the next few hours being pretty darn hangry. It's not a great way to start off the day. On top of moving quickly in the morning, we're not really big on breakfast food, with the exception of bagels and hash browns. We know that skipping breakfast isn't a good idea for us, so we've been trying to make more of an effort to make quick breakfasts that we actually like-- enter scrambled tofu breakfast tacos.

Since October is National Vegetarian Awareness Month, I've partnered with Nasoya to show you yet another use for the ever-versatile tofu. I tried out this recipe from Ambitious Kitchen and it's delicious, can be made in about 15 minutes, and is so convenient. Spencer and I love tacos and make them frequently, so we always have all of the ingredients that this recipe calls for stocked in our house.

I wasn't sure if this recipe would actually be good for a quick breakfast. For the past few years I've been in the habit of pressing my tofu for at least a couple hours prior to cooking it because doing so gets out the excess water and helps the tofu retain flavors. This recipe said nothing about pressing the tofu, so I only pressed it for about 30 seconds to squeeze out a little bit of water. I was worried that it wouldn't taste as good or that I wouldn't like the texture of the tofu, completely forgetting that I used to prepare tofu like this all the time. It was still delicious and the texture was perfectly fine. So yes, I can say that this recipe does fall under the quick breakfast category!

The tofu has 9 grams of protein per serving, the veggies are refreshing, and the garnishes add a little kick. Plus, this recipe is dairy-free/vegan, but of course you could add cheese if you'd like. Unfortunately my avocados were over-ripe by the time I went to make these tacos (why must they be so temperamental?) but they were still delicious and the two of us ate 'em all up. This is definitely something I'd make again-- it's quick, easy, delicious, and great for those who aren't huge fans of traditional breakfast foods.   1. These look delicious! Despite being pescatarian, tofu is something I steer clear of for the most part because I just haven't mastered the art of cooking with it yet haha! I need to step outside of my comfort zone and try a few recipes like this one!
