Fudgey Dark Chocolate Tofu Cheesecake


Vegan Dark Chocolate Tofu Cheesecake

With the holidays coming up many people are dusting off their cookbooks to find recipes for pumpkin pie, apple pie, pecan pie...but I am really not one for baking. It's just not my thing, so I don't typically make any desserts. But! My mom is visiting from Florida right now so I figured this would be a good time to make a lil' somethin'. When I was a kid my mom sneaked tofu into my cookies, so now I'm going to sneak tofu into her cheesecake!

October is National Vegetarian Awareness Month so I've partnered with Nasoya to show you yet another great use for tofu. This recipe from Ambitious Kitchen is an excellent option for those with sensitivities to dairy or gluten. It's also an excellent option for people who don't want to spend all afternoon in the kitchen (*raises hand*) because it can be prepared in only 30 minutes.

This recipe called for Nasoya's Organic Silken Tofu which is something that I've only used a couple times before. I never think to buy silken tofu, I always buy extra firm, so it's kinda foreign to me. I really wasn't sure how the consistency would come out or if it would be close to cheesecake. While the peanut butter and pretzel crust cooked in the oven, I made the silken tofu and chocolate filling, skeptical of the recipe the whole time. I let it cool overnight before serving it and was totally expecting to not like the consistency of it. But y'all-- this recipe is amazing.

The texture was more like a fudgey torte than cheesecake (maybe I did something wrong?) but it was so delicious. The filling wasn't too sweet and the crumbly peanut butter and pretzel crust was a great contrast. Spencer and my mom loved it and raved about it, and I couldn't believe I had made such a great dessert. It was a total hit. It is so incredibly easy to make and so delicious. It's so rich and decadent. This is a great recipe to make if you want to impress your guests with minimal effort. I'll definitely be making this again!   1. This looks absolutely delicious. I've never used silken tofu either, I've seen a few recipes using it so I think I need to try it out. I love that there's peanut butter in the crust too - peanut butter is my soul food.

  2. I'll definitely have to try this as it looks delicious!! I'm not the biggest pretzel fan but peanut butter pretzel crust sounds like something I need in my life. Lol! Also, the decorations you chose are the absolute cutest! xx
