Meatless Summer Meals

Summer is cookout time which usually means hot dogs, hamburgers, and pasta and/or potato salad. Sometimes for people who eat a plant-based diet, cookouts equal eating nothing but sides. Not that side dishes aren't awesome, but it can get a little boring.

I've teamed up with Nasoya and Lightlife to show you a few examples of meatless cookout options that are easy to make, protein-packed, and delicious. Whether you don't eat meat or you're someone who is trying to plan a meal for someone who doesn't, I think you'll find these ideas helpful.

Lightlife's Smart Dogs are one of my favorite meat alternative products. They're delicious, low in fat, and have 7 grams of protein per dog. Plus, they're easy to cook and cook quickly. Smart Dogs are usually what my friends and family choose to be the meatless option at their cookouts for all those reasons.

Another thing I love to make is grilled tofu "steaks" using Nasoya's Organic Extra Firm Tofu. The key to easy tofu grilling is to press as much liquid out of the tofu as possible. I use a tofu press, keep it in the fridge, and let the water drain out for at least 24 hours, though it can certainly be done in less time. An hour before grilling, I marinate the tofu in vegan Worcestershire sauce, then throw it on the grill. It's so good, y'all. So good. You can also cube the tofu and make tofu and veggie kabobs.

When I first transitioned to a plant-based diet I was skeptical of tofu, but I was even more skeptical of tempeh. But now if tempeh is involved, I'm all over it! Lightlife's Garden Veggie Tempeh Burgers have 9 grams of protein per burger, have a great texture, and aren't frozen so they cook more quickly than other veggie burgers.

Instead of the usual pasta salad, try out this Cold Noodle Asian Tofu Salad. It's so flavorful, refreshing, and filling. The recipe didn't call for it, but I added cilantro because I'm always looking for opportunities to add cilantro to my food.

  1. I've never thought about it like that! I'm the person who totally does eat all the meat. This is a great post though especially to give options for those planning to host a cookout so they can have great food so no one gets left out! (:

  2. I've never had any of these meat substitutes; I am a big meat eater but I love trying new stuff. Sometimes we'll have Quorn to mix it up. I'd really like to try that tofu!
