3 quick, refreshing tofu salads

If you eat tofu, you're probably familiar with the process of draining it. (Draining water out of tofu helps it to soak up other flavors better!) Wrapping it in paper towels and/or tea towels, and placing heavy books, tea kettles, cast iron pans on top of it to squeeze the water out. It can take a while. I haven't eaten meat in 11 years, and for that time Nasoya has been my go-to tofu brand. Since I'm a creature of habit I always buy 2 packages of Nasoya's extra firm tofu when I grocery shop, but recently I tried TofuBaked for the first time.

 Busy tofu-lovers rejoice! TofuBaked is already drained, seasoned, and baked so you can eat the tofu right out of the package. There are three flavors-- teriyaki, chipotle, and sesame ginger. I love this product because it's so quick and easy, perfect if you're short on time or if you don't have that much experience cooking with tofu. I tried out 3 different salad recipes using TofuBaked and I loved all of them. If you like refreshing, flavorful salads, keep reading!

I used the sesame ginger flavor to make a Sesame Ginger Mandarin Salad. This is a quick and easy salad to prepare, and delicious of course. This salad requires:
  • 1 package of Sesame Ginger TofuBaked cut into chunks
  • 1 package of spring salad mix
  • 1 cup of shredded carrots
  • 1 can of mandarin oranges drained
  • 1 avocado cut into chunks
  • 1/2 cup toasted sliced almonds
  • 1 tbsp. sesame seeds

I used the chipotle TofuBaked to make a Tofu Taco Salad, but with my own spin-- I used kale instead of lettuce. Have you ever used kale for taco salads? It works surprisingly well. Anyway, for this salad you'll need:
  • 1/2 cup salsa
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon vegetable oil
  • 1 teaspoon ground cumin
  • 4 cups chopped Romaine lettuce (or kale!)
  • 1 package (8 ounces) Nasoya Chipotle-Flavored Baked Tofu, crumbled
  • 3/4 cup shredded Cheddar cheese
  • 2 Roma tomatoes, chopped
  • 1/4 cup chopped onion
  • 1/4 cup sliced black olives
  • Sour cream, if desired

I used the teriyaki TofuBaked to make a Thai Salad. For this salad you'll need:
  • ½ small purple cabbage, coarsely chopped
  • 1 large carrot, coarsely shredded
  • 5 scallions, sliced
  • 1/3 cup chopped cilantro
  • 1 package TofuBaked (any flavor), cubed
  • 1 tablespoon toasted sesame seeds, optional
and for the dressing: 
  • 1/3 cup pure maple syrup
  • 2 tablespoons soy sauce/tamari
  • 1 tablespoon toasted sesame oil
  • 2 cloves garlic, minced
  • ½ teaspoon minced fresh ginger
  • ½ teaspoon cayenne pepper

Do you have 2 minutes to spare?

I started participating in beach clean ups maybe 6 years ago and almost every time I would try to convince people to join me they would all say the same thing: "I don't have the time." That's why I love the movement of the 2 Minute Beach Clean. Everyone has 2 minutes to spare, especially for something are important as the health of the oceans. Saturday June 11th is the first #2MinuteBeachClean day, so if you're heading to the beach this weekend please consider taking 2 minutes (or more!) to

  • collect litter
  • take a photo of what you collect
  • share it on social media and use the #2MinuteBeachClean hashtag to help promote the movement and inspire others

Can't participate this weekend? Do it anytime you're free! Don't live near the ocean? Clean up the shore at a local pond, river, lake--- any body of water!

There is so much plastic pollution on our beaches and in the ocean. If you have the time to sunbathe, you have the time to pick up a few pieces of trash! Help keep the beaches you enjoy clean and beautiful. 

Who knows, you might find something kinda cool while you're cleaning!
